The pasta has a very high Free Range egg percentage (30%) and we use a special blend of 00 and Durum Wheat flour so that the pasta holds the cooking very well. The Asparagus filling is made with delicate ricotta and tender tips of Italian asparagus. We then add tasty Italian Hard cheese to enhance the flavour. They can be served with simple oil and cheese, cream, Salmon and even dry-cured ham! Suitable for freezing.

        2. Add the pasta and cook for 2-3 minutes for fresh pasta, or 3-4 minutes for frozen pasta;
        3. Drain and serve with parmesan and olive oil, or with your favourite sauce.
